Mediterranean Summer Salad

"This herbal summer salad is a great option for warm days when you want something cool, light and fresh. It's one of my favorite recepies to make and share during summer days."

Ingredients:

- 1 bunch of parsley

- 1 bunch of cilantro

- 1 scallion

- 1/2 cup of sliced almonds

- 1/3 cup of pine nuts

- 1 red onion

- 1 lemon

- Sea salt

- Black pepper

- 5 tablespoons of olive oil

- 2 tablespoons of honey

- A pinch of Za'atar

Preparation:

In a bowl, add the chopped herbs and diced onion. Sautée the almonds and the pine nuts in olive oil until browned and add them into the bowl, followed by the lemon zest.

For the dressing, squeeze the lemon juice into a small bowl and mix it with the honey and olive oil. Add za'atar, salt and pepper to taste and whisk everything together. Once the dressing is uniform, toss it into the salad and serve immediately. Enjoy!
